Take A Lookin' At My Cookin' #15- Crockpot White Bread




Crockpot White Bread

Did you know you can make bread in a crockpot?! I didn't! 
At least, not until I came across this recipe.
It's white bread and I slathered some homemade strawberry jam my MIL made on it. 
Delicious!

  • 1 envelope (.25 ounce) or 2 1/4 teaspoons active dry yeast
  • 1 teaspoon sugar
  • 1/4 cup warm water
  • 1 egg
  • 1/4 cup vegetable oil
  • 1 cup lukewarm water
  • 1 teaspoon salt
  • 1/4 cup sugar
  • 3 1/2 to 4 cups flour

In a bowl, combine yeast, 1 teaspoon sugar, and 1/4 cup warm water. Allow yeast to foam, about 5 minutes. Add egg, oil, lukewarm water, salt, 1/4 cup sugar, and 2 cups of flour. Beat with an electric mixer 2 minutes on low. With a wooden spoon, stir in the remaining flour. Place dough in greased 4-5 quart slow cooker. Cover and cook on high heat 2-3 hours. Remove stoneware from slow cooker and let stand 5 minutes before slicing.

Take A Lookin' At My Cookin' #14- Chicken Pot Pie

Chicken Pot Pie

1 bag (1lb) frozen mixed vegetables, thawed, drained
1 cup diced cooked chicken
1 can (10.75 oz) condensed cream of chicken soup
1 cup Original Bisquick mix
1/2 cup milk
1 egg

Heat oven to 400 degrees. In ungreased 2-quart casserole, mix vegetables, chicken, and soup until well blended. Stir remaining ingredients in medium bowl with wire whisk or fork until blended. Pour over chicken mixture. Bake uncovered about 30 minutes or until crust is golden brown.

Take A Lookin' At My Cookin' #13- Easy Pizza


Easy Pizza

This doesn't really count as "cooking" to me because it is such an easy dinner but I know that I personally love to learn new, easy, and cheap dinners so I figured I might as well share this one with you!

We pretty much always have canned pineapple, cheese, and prego in our house so for this all I need is to go buy a loaf of french bread. Then you just cut the bread, slather on some sauce, sprinkle on a bunch of cheese, cover with whatever other toppings you like (we like pineapple on ours) and then put it in the oven until it is all melted and crispy.

Easy plus delicious!

Take A Lookin' At My Cookin' #10- Chicken Salad Sandwiches







Chicken Salad Sandwiches

I love to have this around the house for lunch on a warm day.

Canned chicken
Purple grapes (cut in half)
Celery (chopped up)
Apple (chopped up)
Miracle Whip

Some people like to add nuts but not me!


It takes a little bit of time to chop and cut everything up but then you mix it all together, slather it on toasted bread and enjoy!

Take A Lookin' At My Cookin' #9- Crispy Southwest Chicken Wraps






Crispy Southwest Chicken Wraps
I originally found this recipe on Pinterest.


*Makes 6 wraps*
(I added more chicken and stuff so it ended up making almost twice as many wraps.)

INGREDIENTS:

1 cup cooked rice, warm or at room temperature
1 cup cooked, shredded chicken
1 can black beans, rinsed and drained
1 green onion, finely sliced (white and green parts)
1/2 red or green pepper, diced
1/4 cup fresh cilantro, chopped
juice of 1 lime
1/2 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic salt
2 cups shredded cheese (I used cheddar and Michael liked adding mozzarella too)
Sour cream (optional)
6 burrito-sized flour tortillas

DIRECTIONS:

Mix rice together with chili powder, cumin and garlic salt. Add remaining ingredients except for cheese and sour cream. Sprinkle cheese over tortillas, leaving 1/2-inch border around edges, then arrange chicken and rice mixture down the center of each tortilla. (Optional: on some of the wraps, I dotted the cheese with about 1-2 tablespoons of reduced fat sour cream before arranging chicken and rice mixture down the center – it made the wraps delightfully creamy.) Roll stuffed tortillas, leaving edges open. Spray the tortillas all over with cooking spray.

Heat a large non-stick skillet (or griddle) over medium heat for 1 minute. Arrange 2 wraps, seam-side down, in pan and cook until golden brown and crisp, about 2-3 minutes per side. Transfer to a plate and repeat with remaining wraps. Serve.

Take A Lookin' At My Cookin' #8- Macaroni and Cheese





 
Macaroni and Cheese
 

Dry macaroni (12-16 oz.)
4 cups milk
shredded sharp cheddar (I made with medium)
1 tsp salt
cottage cheese
1/4 tsp pepper
1/2 c margarine
1/2 cup flour/cornstarch

Cook macaroni, drain. Alternate layers of macaroni, cheddar, and cottage cheese in greased 2 quart pan. Starting with macaroni and ending w/cheese.

Melt butter in pan. Stir in flour to make smooth paste. Gradually blend in milk. Heat to boiling, stirring constantly. Cook about 2 minutes until thick. Add salt and pepper. (Be sure to mix it in well so you don't get pepper clumps!) Pour sauce over mac and cheese. Bake 375 degrees for 30-35 minutes.

Take A Lookin' At My Cookin' #7- Holiday Sweet Potatoes




 

This is no longer a linkup. I'm still posting them and you can do it too if you want (with the button from my sidebar in your post) but the linkup wasn't working out so well! I'm bummed but I'm kind of gathering my fave recipes one at a time by doing this and there is a page at the top of my blog with the recipes I have posted so far.

Grandma's Sweet Potatoes

These sweet potatoes have always been a favorite of mine for the holidays. I've always loved having them for Thanksgiving and Christmas and when I came across the recipe for them, I decided to try to make them myself. It looked easy (and it was)!


  • 1/2 stick margarine or butter
  • 2 cans sweet potatoes (large)
  • 1/2 cup sugar
  • 1/4- 1/2 cup orange juice (more is better)
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1 egg
  • marshmallows
Warm potatoes in own juice, drain. Whip with all other igredients. Bake 20 minutes at 375 degrees. Top with marshmallows and bake an additional 10 minutes.
I may have added too many marshmallows...and they sunk in right after these pictures. It was delicious, just like my mom makes them! It just felt a little wrong to eat them on a normal day. I think I need to wait for the holidays to eat them!

Wild Rice and Chicken


  • 2 cans (10.75 ounces each) cream of chicken soup, condensed
  • 2 cups water
  • 2 boxes (4.3 ounces each) seasoned long-grain and wild rice, with seasoning packets
  • 4 boneless, skinless chicken breasts
Combine soup, water, rice, and seasoning packets. (Do not cook this in a slow cooker smaller than 3 1/2 quarts- rice expands.) Pour half of rice mixture into greased slow cooker. Lay chicken on top of rice. Pour remaining rice mixture over chicken. Cover and cook on low heat 6-7 hours or on high 3-4 hours. Do not overcook or rice will become mushy. Makes 4-6 servings.

Take A Lookin' At My Cookin' #5- Peach Cobbler








Peach Cobbler

I originally found the recipe for this at Bakerella.com.

  • 24.5 oz jar of sliced peaches in light syrup
  • 1 package yellow cake mix
  • 1 stick butter (1/2 cup), cut into 16 pieces
  • 1 cup brown sugar
  • 1/2 cup chopped walnuts (I don't use them in mine)
Preheat oven to 350 degrees F.

Layer ingredients in a 13 X 9 dish, in order starting with the peaches.

Bake for about 40 minutes.

Serve warm or cold… with or without ice cream.

Lasagne


  • Grease a 9x13 glass pan
  • Spread a thin layer of Prego sauce on the bottom of the pan. Then layer Mozarella, Cheddar, and lasagne noodles (each layer, switch which direction you lay the noodles- horizontally and vertically)
  • Continue layering in this pattern. (You could also use cottage cheese and ricotta.)
  • End with cheese as your top layer and then pour some water (about 2 cups) over all of it.
  • Cover with foil and put in the oven at 350 degrees for an hour.

Take A Lookin' At My Cookin' #3- Crockpot Cheesy Chicken





Cheesy Chicken


  • 4-6 Boneless, skinless chicken breasts
  • 2 cans (10.75 ounces each) cream of chicken soup, condensed
  • 1 can (10.75 ounces) cheddar cheese soup, condensed
  • 1 teaspoon of dried rosemary or dill
Place chicken in greased slow cooker. In a bowl, combine remaining ingredients and pour over chicken. Cover and cook on low heat 6-8 hours or on high heat 3-4 hours. Makes 8-10 servings.
Serve over hot cooked noodles or rice with a side of steamed vegetables.

As you can see, I chose to have it with rice and plenty of sauce and chicken on top. Delish!

Tip: Throw in some broccoli toward the end of the cooking time for extra nutrition and flavor!

Shredded chicken burritos/tacos.

Ever since my friend Wendy taught me how to make this, it's been one of my go-to dinners. My friend Kaitlin requests them whenever she comes to visit.

Chicken: Throw about six boneless, skinless chicken breasts in a crockpot. In a separate bowl/cup, mix together about a cup or two of water with a packet of taco seasoning. Pour over chicken. Set on high for 3-4 hours (or until chicken shreds easily). You could probably set it on low for about 6-8 hours too but I'm not that patient most of the time. ;)

I love to make guacomole (mash up avocado and add garlic salt and lime juice) to have on the burrito. I also like having tomatoes, spinach, sour cream, shredded cheddar cheese, etc. I like the works!

It makes for a great meal. You could serve it with rice and beans on the side but I usually fill up on this alone. Enjoy!

This week I am sharing a recipe for banana bread. It is so delicious! I bought more bananas just so I could make it again this week. Usually I have to add applesauce to make it moist enough but this recipe was great even without it.
  • 3 or 4 ripe bananas, smashed
  • 1/3 cup melted butter
  • 1 cup sugar (I only used 3/4 cup)
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups of all-purpose flour
  • Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
